The outer covering - all-purpose flour (maida), ghee, salt, semolina (rava or sooji) and water (or milk) for kneading. For Filling / Stuffing Dry roast sooji and poppy seeds separately till the time they get light brown color. Add coconut to dry roasted sooji and poppy seeds, add sugar, cardamom powder, dry fruits and mix well. It is a crescent-shaped Indian style deep-fried pastry stuffed with Indian milk solids, coconut and dry fruits known as Mawa Gujiya.

  1. First prepare the stuffing for Karanji- roast the rava with two spoonful of ghee (in medium low flame),then add coconut flakes and roast for 5 mins. Now in mixing bowl add all the other stuffing ingredients including roasted rava and coconut and keep it aside
  2. Now in big bowl add maida,salt and ghe (mohan) and make parts of aata into separate bowls. Add desired color and make soft dough. Let dough rest for 15 mins.
  3. Now in one bowl 2 tablespoons ghee and 2-4 tablespoons cornflour.make glue kind of mixture. Now take the dough and roll it and keep it aside.
  4. Now take one color layer apply the glue mixture of cornflour-ghee and seal it with another color layer. Now make one final roll and cut into small balls (small lemon sizes)shapes.
  5. Take one ball every time and Roll it to small puri and stuff the stuffing inside and seal it with milk or water. And immediately fry on medium- low flame about 5-8 mins. You can store them for week or so.
