Stir and reduce the heat to the lowest. BRING coconut milk, water, sugar, lime leaf and salt to boil in medium saucepan on medium heat, stirring occasionally. Rinse the rice and drain well. Place it in a pot along with the coconut milk, water, and salt.

Instructions to make Coconut Rice:
  1. Place the water, coconut and salt into a saucepan. Mix well to break up any chunks of the coconut milk.
  2. Bring to the boil, stir in the rice and lower the heat.
  3. Cover and simmer for 15-20 minutes or until most of the liquid is absorbed.
  4. Remove from the heat and allow to sit covered for another five minutes.
  5. Stir in the spring onions and serve.

Rinse the rice and drain well. Place it in a pot along with the coconut milk, water, and salt. Set over medium-high to high heat. Stir occasionally to keep rice from sticking to the bottom of the pot and burning. You can serve your coconut rice with, brown stew, curry goat, or steamed cabbage.
