  1. Heat a pan with oil and put asafoetida, mustard seeds, urad dal and chanadal in it.
  2. When the mustard seeds crackle then add the cashew nuts and peanuts along with curry leaves and red chilli and saute it for sometime.
  3. Then add grated coconut in it and saute it and add salt in it.
  4. Then add the cooked rice and cover it and cook it for 1 minute.
  5. Now your coconut rice is ready.
  6. Serve hot with curd or any curry.
