To make it, simply replace half of the cooking water with coconut milk. You can serve your coconut rice with, brown stew, curry goat, or steamed cabbage. Instructions to make Coconut Rice:
  1. Blend Coconut, green chilies and ginger in a dry grinder, about a minute.
  2. Pop mustard seeds in hot oil in a skillet over medium heat, about a minute or two. Add asafoetida, fennel seeds, curry leaves-about 1 minute. Add blended Coconut, green chilies and ginger; continue cooking- 1-2 minutes over medium heat. Stir in rice, and turmeric, about 2 minutes Mix thoroughly, remove from heat.
  3. Salt to taste. Garnish with cilantro and nuts. - Serve with vegetable chips and papads,
