  4. Light dust your work surface with flour and knead the dough for 2min.cover and allow it to rest for 5min.
  5. Meanwhile prepare your filling by heating 2-3tbsp veg oil in a pan, add crushed garlic clove if using fresh, add blended scotch bonnet and onion mix, stir fry few min, add your deboned mashed fish, seasoning and spices, stir fry 5min and bring down from heat. Divide your dough into two
  6. Roll out wide and flat. Divide into four squares as shown in the picture below. Add the filling in center of each. Fold and use your thumb to seal the edges use a fork to press all the edges. Poke hole on the top using same fork. Egg wash the surface and bake until golden brown
