Puff Puff — A very popular West African street food that's quick and easy to make with different variations. Most West African countries are familiar with the popular street food Puff- Puff, which is known by different names depending on the country. Once the underside of the puff puff has turned golden brown, flip the ball so that the topside will be fried as well. When both sides are golden brown, take out the puff puff balls and place in a sieve.

Puff puff is one of the most popular of current trending meals in the world. It’s appreciated by millions every day. It is simple, it is quick, it tastes yummy. Puff puff is something which I’ve loved my whole life. They’re fine and they look wonderful.

To get started with this particular recipe, we have to first prepare a few ingredients. You can have puff puff using 6 ingredients and 6 steps. Here is how you can achieve it.

The ingredients needed to make Puff puff:
  1. Get 600 g all-purpose flour
  2. Take 10 g yeast
  3. Prepare 150 g sugar (use as required
  4. Make ready 1/2 tsp salt
  5. Get 550-650 g Lukewarm Water 1-3tbsp chilli flakes
  6. Get Vegetable oil for frying

Nigerian puff puff is deep fried similarly to doughnut and Ghanian bofrot. It is soft, spongy, fluffy, easy to make and requires just few ingredients. It is usually eaten as starters or snacks. In Nigerian parties, you can almost be sure that puff puff will be served as small chops (appetizer).

Instructions to make Puff puff:
  1. In a shallow bowl, add flour and salt together (combine salt with flour first) - - Add other dry ingredients and combine well
  2. Add lukewarm water to the dry mixture in bits to form a batter. You can add 500g at first then check if it needs more water. (the batter should not be runny and it shouldn’t be thick as well, find a balance in between the two)
  3. Cover the bowl with a cling film or a samp towel and place in a warm place to proof. (Till batter doubles in size usually between an hour or two. You can leave it longer if you want) - - Once the mixture has risen and doubled in size, you then move on to frying.
  4. Dip your hand in the water to wet it a bit, shake off excess - - Dip your hand in batter, draw the batter towards the bowl and yourself - - Keep the batter in between your fingers and palm - - Squeeze batter in-between your palm and allow it to drop freely into the oil - - Don’t overcrowd the oil
  5. The batter should float to the top of the oil, this is where the magic start, I just love the bits when the puff puff starts turning in the hot oil (reduce the heat a bit at this point so that puff puff can fry through and be well done) - - Fry puff puff on both sides till golden brown
  6. Puff puff is ready

It is usually eaten as starters or snacks. In Nigerian parties, you can almost be sure that puff puff will be served as small chops (appetizer). While working on this recipe, I unearthed some childhood memories that I'd completely forgotten about. When I was in middle school I use all my lunch money to buy puff puff, Buns, Meat pie, and doughnuts… I know there is so much nostalgia associated with the sight and smell.
